Sometimes known as plum pudding or Christmas duff, Christmas pudding is a steamed pudding originally designed to create something rich and tasty from traditionally expensive ingredients and the sweet spices that create its distinctively rich aroma. It is a very dark pudding, almost black, the look is created from the use of the dark sugar, black treacle and the long cooking.

Originally they were boiled in a pudding cloth which gave them their round appearance, however since the beginning of the 20th century it has been far more common to use bowls.

When presented for cutting and eating it is usually smothered in warm brandy and set alight creating the magical Christmas effect.

The traditional Christmas pudding must be made well before Christmas, at least two months, and then fed with alcohol regularly for the full flavour to develop.
