Punch

Punch is the general term for a mixed drink which is usually alcoholic (but doesn’t have to be) and containing fruit or fruit juice (though not always). It is served at parties from large wide bowls called punch bowls with a ladle. It’s a quick way of serving drinks to a large group of people.

The word is most likely from Hindi "panch" meaning "five" because it had five ingredients, although it could be from "puncheon" which was a 72 galloon cask, the end of which could be turned into a punch bowl. Considering the cost of a puncheon the idea of chopping the end off to make a bowl seems unlikely.

The original "Wassail" punch had a wine or brandy base but by 1655 this was replaced by Jamaican rum.

English Christmas Punch (hot)
2 x 750-ml. bottles of Red Wine (dry)
3 cups Tea
Juice of 1 orange
Juice of 1 lemon
1 lb. Sugar
1 750-ml. bottle of Dark Rum
Heat the first four ingredients on a low heat in a saucepan then transfer to a punch bowl. Fill the ladle with sugar and saturate with rum. Ignite it. Pour contents into the punch while alight. Add the rest of the rum and sugar to the punch and stir. Serves about 25.

Bourbon Punch (chilled)
2 litre Bourbon
1 pt. fresh Orange Juice
1 cup Peach Brandy
1 cup fresh Lemon Juice
2/3 cup sugar syrup
2 qt. chilled Club soda
12 Maraschino cherries
Mix ingredients in a chilled punch bowl and add club soda before serving. Garnish with cherries.

St. Cecelia Society Punch
Lime Slices
Lemon Slices
Pineapple Slices
1 cup Sugar
1 750-ml. bottle of Cognac
1 750-ml. bottle of Peach Brandy
1 qt. of Iced Tea
1 pt. Dark Rum
1 cup Curacao
4 750-ml. bottles of Champagne
2 l. Club Soda
Place fruit in a large pot with a lid. Spread sugar evenly over fruit. Add cognac. Leave for 24 hours. Add the rest of the ingredients, saving the champagne and soda until serving. Serves about 70.
